Before use the bottles and jars must be carefully sterilised by being well washed, dried, and then made very hot in the oven.

Sterilisers

A sterilising apparatus is essential if much bottling is to be done. The water should three-quarter cover the bottles; make sure also that the water covers the thermometer bulb.

Sterilisers make the bottling of preserves a very simple matter. If, however, you do not possess a steriliser, an ordinary boiling pot will serve the purpose, but the jars must be wrapped in cloths or straw to prevent them from damaging each other.
